For an 8" square (or something close)
INGREDIENTS:
crust:
1 1/2 cup flour (do not sift)
3/4 teaspoon coarse salt
1 teaspoon sugar
1/2 cup olive oil ( can be substituted with vegetable oil)
2 tablespoons milk
1/2 teaspoon almond extract
Filling:
5 ripe peaches sliced
Topping:
2 tablespoons flour
2 tablespoons cold butter
3/4 cup sugar
DIRECTIONS:
Preheat oven to 425 degrees F
In an 8" square pan, stir together flour, salt, and sugar.
In a small bowl whisk together the oil, milk, and almond extract.
Pour liquid mixture into the flour and mix with fingers to form the crust.
Crust should be about 1/8 inch thick.
Arrange the fruit in rows over the crust (they should be snug)
In a bowl, combine sugar, flour, salt, and butter (add a little extra flour if the fruit is super juicy and less sugar if they are extra sweet).
Use your fingers to pinch the butter into the dry ingredients until crumbly. It should look like tiny pebbles.
Sprinkle the pebble mixture over the fruit.
Bake for 35-45 minutes
Serve at room temperature.
